- 1 ½ cups untoasted apricot and almond muesli (or your favourite muesli)
- 1 cup So Good
- 1/3 cup orange juice
- 1 tablespoon honey
- 1 small apple, cored and grated
- 1 cup mixed berries
- 200g tub soy yogurt (plain or berry)
- Combine muesli, So Good, juice and honey in a bowl. Cover and refrigerate overnight.
- Just before serving add apple, berries and yogurt. Mix well.
- Serve topped with extra fresh fruit.
